Our Borage Honey is a truly special and delicate honey, produced during a short and intense flowering period when our bees forage on vibrant blue borage flowers grown across Yorkshire farmland. Borage, or Starflower, is a nectar-rich plant that relies heavily on pollinators, and its flowers are short-lived, making timing and strong, healthy colonies essential.
Naturally crystallised borage honey is a premium, pale-coloured, and exceptionally smooth product, highly regarded for its delicate, mild flavour with subtle, floral notes. While it is known for naturally slow granulation due to its lower glucose content, when it does crystallise, it becomes very thick or solid, often with a fine, spreadable, and creamy texture.
Crystallised borage honey is a sign of high-quality, pure, "raw", and unprocessed honey, which retains its natural enzymes and nutritional benefits.
By placing our hives near borage fields, we help support farmers through effective pollination, and in return, when conditions allow, our bees produce a surplus of honey that can be harvested with care. This careful balance ensures the bees always have what they need first.
The honey is extracted gently and responsibly, using minimal handling and no pasteurisation or unnecessary filtration. This preserves the honey’s natural aroma, flavour, and characteristics, exactly as created by the bees. The result is a beautifully light-coloured, runny honey with a refined, subtle sweetness and fresh floral notes — often described as one of the most elegant honeys produced in the UK.
As with all "raw" honey, the colour and flavour may vary slightly from batch to batch, depending on weather conditions and the exact mix of flowers available to the bees during foraging.
